A simple, bright, and bubbly mocktail combining tart cherry juice, fresh lime juice, and sparkling water for a refreshing summer drink.

  • 1 cup (8 fl oz) tart, unsweetened cherry juice
  • Juice and zest of fresh limes (about 1/3 cup or 2.7 fl oz juice)
  • 2 cups (16 fl oz) plain sparkling water
  • 2 tablespoons (1 fl oz) simple syrup or sweetener of choice (optional)
  • Ice cubes
  • Fresh mint leaves (optional garnish)
  • Fresh lime slices (optional garnish)
  • Fresh cherries (optional garnish)

Instructions

  1. Roll each lime firmly on the counter to loosen juices. Cut in half and juice until you have about 1/3 cup (80 ml) of fresh lime juice. Set aside.
  2. Make simple syrup (optional): In a small saucepan, combine 1/2 cup granulated sugar and 1/2 cup water. Heat over medium, stirring until sugar dissolves completely. Let cool before using. Alternatively, use honey or agave syrup.
  3. In a mixing glass or pitcher, combine 1 cup tart cherry juice with the fresh lime juice. Add 2 tablespoons simple syrup or to taste, depending on sweetness preference.
  4. Fill glasses or the pitcher with plenty of ice cubes to chill the mixture properly.
  5. Slowly add 2 cups sparkling water to the pitcher or individual glasses. Stir gently to combine without losing the fizz.
  6. Garnish with fresh lime slices, mint leaves, or a cherry on top. Serve immediately.

Notes

Use freshly squeezed lime juice for best flavor. Adjust sweetness by varying simple syrup amount or omitting it. Stir gently after adding sparkling water to preserve carbonation. Can be customized with muddled fresh cherries or mint leaves. For a sugar-free version, skip simple syrup or use a sugar substitute like erythritol.
