  • 810 slices thick-cut bacon
  • 8 ounces (225g) sharp cheddar cheese, cut into small cubes
  • ½ cup (120ml) BBQ sauce (sweet and smoky variety)
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Optional: fresh parsley or chives, finely chopped for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and place a wire rack on top if using.
  2. In a large mixing bowl, combine ground beef with onion powder, garlic powder, smoked paprika, salt, and pepper. Mix gently for about 30 seconds without overworking the meat.
  3. Divide the beef mixture into 8 equal portions (about 2 ounces or 55g each). Flatten each portion slightly to form a small patty.
  4. Place a cube of cheese in the center of each patty. Fold the meat around the cheese, sealing it completely to form a ball.
  5. Wrap each beef ball tightly with a slice of bacon. Use toothpicks if necessary to secure the bacon.
  6. Arrange the bacon-wrapped balls on the wire rack or directly on the parchment-lined baking sheet, seam side down.
  7. Brush each burger bomb generously with BBQ sauce, covering all sides.
  8. Bake for 25-30 minutes, turning once halfway through and brushing again with BBQ sauce for an even glaze. The bacon should be crisp and the internal temperature of the beef should reach 160°F (71°C).
  9. Let the burger bombs rest for 5 minutes before serving to allow the cheese to settle.

Notes

Do not overmix the beef to keep the burger bombs tender. Use a wire rack to allow bacon to crisp evenly.
