  • 1 ½ cups shredded mozzarella cheese (170 grams)
  • ½ cup shredded smoked gouda or cheddar cheese (55 grams)
  • 1 tablespoon olive oil
  • Fresh cilantro or parsley, a handful chopped
  • Salt and pepper to taste
  • Optional: red pepper flakes, sliced jalapeños

Instructions

  1. Preheat oven to 475°F (245°C) and place pizza stone or baking sheet inside to heat.
  2. Heat olive oil in a large skillet over medium-low heat. Add sliced onions, season with salt, and cook slowly for 20-25 minutes, stirring occasionally until golden brown and caramelized.
  3. In a bowl, toss shredded BBQ chicken with ½ cup BBQ sauce until evenly coated.
  4. Roll out pizza dough on a lightly floured surface to about 12 inches in diameter. Transfer to parchment paper.
  5. Spread a thin layer (about 2 tablespoons) of BBQ sauce over the dough.
  6. Sprinkle 1 cup mozzarella cheese evenly over the sauce.
  7. Distribute BBQ chicken over the cheese, then scatter caramelized onions on top.
  8. Add remaining ½ cup mozzarella and ½ cup smoked gouda or cheddar cheese evenly over the pizza.
  9. Transfer pizza on parchment paper to the preheated stone or baking sheet.
  10. Bake for 12-15 minutes until crust edges are golden and cheese is bubbling and slightly browned.
  11. Remove from oven and let rest 3-5 minutes. Garnish with chopped cilantro or parsley and optional red pepper flakes.
  12. Slice into 8 wedges and serve warm.
