Ingredients

Scale
  • 8 oz cream cheese, softened (Philadelphia recommended)
  • 1 cup heavy whipping cream, cold
  • 3/4 cup powdered sugar, sifted
  • 1 teaspoon strawberry extract or 2 tablespoons fresh strawberry puree
  • Pink gel food coloring (optional)
  • 1 pint fresh strawberries, hulled and sliced (about 300 g)
  • Pink macarons (store-bought or homemade)
  • Mini pastel pink marshmallows
  • 4 oz white chocolate bark, broken into shards (about 115 g)
  • Pink candy-coated chocolates or sprinkles
  • Rice Krispies treats, cut into small squares
  • Pink gummy candies (optional)
  • Edible glitter or pearl dust (optional)
  • Fresh mint leaves (optional)

Instructions

  1. In a chilled medium bowl, beat 8 oz softened cream cheese with 1 cup cold heavy whipping cream using an electric mixer on medium speed for 3-4 minutes until smooth and creamy.
  2. Gradually sift in 3/4 cup powdered sugar and add 1 teaspoon strawberry extract or 2 tablespoons fresh strawberry puree while continuing to beat. Mix until fully combined and the dip holds soft peaks. Add a few drops of pink gel food coloring if desired.
  3. Cover and refrigerate the dip for at least 15 minutes to firm up slightly while preparing the board.
  4. Wash and slice 1 pint fresh strawberries. Break 4 oz white chocolate bark into shards. Cut Rice Krispies treats into bite-sized squares. Arrange pink macarons, mini marshmallows, and pink candy-coated chocolates in small piles.
  5. On a serving platter, place a small bowl or ramekin with the chilled creamy pink dip near the center. Scatter the prepared toppings around artistically, balancing colors and textures. Sprinkle edible glitter or pearl dust for extra glam if desired.
  6. Garnish with fresh mint leaves. Let the board sit at room temperature for 10 minutes before serving to soften the dip and enhance creaminess.

Notes

Keep the mixing bowl chilled to help the whipped cream hold better. Avoid over-whipping the cream to prevent grainy texture. Let the dip sit at room temperature for 5 minutes if too stiff after chilling. Assemble the board just before serving to keep toppings fresh and crunchy. For vegan or dairy-free versions, substitute cream cheese and heavy cream with dairy-free alternatives like coconut cream.
