A juicy, tender glazed ham slow-cooked in a Dutch oven with a sweet and tangy caramelized pineapple glaze, perfect for holidays and family gatherings.

  • 57 lbs bone-in fully cooked ham (spiral-cut preferred)
  • 2 cups fresh pineapple chunks (about 300g)
  • 1 cup brown sugar (200g), preferably dark brown sugar
  • 1/4 cup honey (85g)
  • 2 tbsp Dijon mustard (30ml)
  • 2 tbsp apple cider vinegar (30ml)
  • 1 tsp ground cinnamon (2g)
  • 1/4 tsp ground cloves (0.5g)
  • 2 tbsp unsalted butter (28g)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a small bowl, whisk together brown sugar, honey, Dijon mustard, apple cider vinegar, cinnamon, and ground cloves until smooth. Set aside.
  3. Melt butter in your Dutch oven over medium heat on the stovetop. Add pineapple chunks and cook, stirring occasionally, until caramelized and softened, about 7-8 minutes. Watch carefully to avoid burning.
  4. Add half of the glaze to the pineapple in the Dutch oven and stir to coat well.
  5. Place the ham in the Dutch oven, cut side down if spiral-cut. Spoon the remaining glaze evenly over the top and sides of the ham.
  6. Cover with the Dutch oven lid and transfer to the preheated oven. Bake for about 1 hour and 30 minutes, basting the ham with pan juices and glaze every 30 minutes.
  7. For a caramelized finish, remove the lid in the last 15 minutes, spoon some glaze over the ham again, and increase oven temperature to 400°F (205°C). Watch closely to prevent burning.
  8. Remove the ham from the oven and let it rest uncovered for 10-15 minutes to allow juices to redistribute.
  9. Slice and serve warm with caramelized pineapple spooned over the top.

Notes

If pineapple browns too quickly, reduce heat or add a splash of water. Baste ham every 30 minutes to keep moist. Let ham rest 10-15 minutes before slicing to retain juices. For dairy-free, substitute butter with coconut or olive oil. Use fresh pineapple for best caramelization. Can use a covered roasting pan if no Dutch oven is available.
