  • 2 cups beef broth (low sodium preferred)
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup all-purpose flour (can substitute with cornstarch for gluten-free)
  • 1/2 cup sour cream (full-fat or light)
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat the beef tips dry with paper towels and season generously with salt and pepper.
  2. Heat oil in a large skillet over medium-high heat. Brown the beef tips in batches, about 3–4 minutes per batch. Set aside.
  3. In the same skillet, sauté the sliced onion for 4–5 minutes until softened and slightly caramelized.
  4. Add minced garlic and cook for 30 seconds until fragrant.
  5. Add sliced mushrooms and cook about 6 minutes until they release moisture and start to brown.
  6. Transfer beef, onions, garlic, and mushrooms to the slow cooker. Pour in beef broth and Worcestershire sauce. Stir gently to combine.
  7. Cover and cook on low for 6–8 hours or on high for 3–4 hours until beef is fork-tender.
  8. About 30 minutes before serving, mix flour with a few tablespoons of cold water to form a slurry. Stir into the slow cooker to thicken the gravy.
  9. Once thickened, stir in sour cream until well blended. Adjust salt and pepper to taste.
  10. Garnish with chopped fresh parsley and serve hot over mashed potatoes, rice, or buttered noodles.
