Ingredients

  • Brie or Camembert (8 oz wheel)
  • Aged Cheddar (6-8 oz)
  • Goat Cheese Log (4-6 oz)
  • Manchego (6 oz)
  • Blue Cheese (4 oz, optional)
  • Prosciutto (4-6 oz)
  • Genoa Salami (4-6 oz)
  • Soppressata (4 oz)
  • Fresh Cranberries (1 cup)
  • Fresh Rosemary Sprigs (4-5 sprigs)
  • Fresh Grapes (1 cup, red or green)
  • Dried Figs or Apricots (½ cup)
  • Assorted Crackers and Bread (about 8 oz total)
  • Mixed Nuts (1 cup)
  • Cornichons or Pickled Vegetables (½ cup)
  • Honey or Fig Jam (¼ cup)
  • Dark Chocolate (2 oz, 70% cacao)

Instructions

  1. Set out your cheeses 30 minutes before serving to bring them to room temperature.
  2. Prepare your board: place a large wooden board or platter on a flat surface. If using a baking sheet, line it with parchment paper. Position small ramekins in corners or along edges.
  3. Place the cheeses first as anchor ingredients. Space them evenly around the board. Cut brie in half or leave whole, slice aged cheddar into thin triangles and fan them out, place goat cheese log whole or sliced into rounds, and position manchego as a wedge or pre-sliced triangles.
  4. Add the meats: drape prosciutto in loose folds near the brie, fold salami slices in half and arrange in piles or fan them out, and place soppressata near the cheddar.
  5. Fill in with fruits and vegetables: scatter fresh cranberries in small clusters, tuck rosemary sprigs between cheeses and meats, place grape clusters in gaps, add dried figs or apricots near manchego or blue cheese, and arrange cornichons in a pile or ramekin.
  6. Add crunchy elements: fill remaining gaps with crackers and bread slices in small piles, and sprinkle mixed nuts into empty spaces.
  7. Place sweet additions: spoon fig jam or honey into small ramekins, add dark chocolate pieces near goat cheese or brie, and drizzle honey over brie if desired.
  8. Step back and check for bare spots. Fill with extra cranberries, crackers, or rosemary sprigs. Aim for abundance without crowding.
  9. Serve immediately or cover loosely with plastic wrap and refrigerate for up to 2 hours. Let sit at room temperature for 20 minutes before serving.
