  • 1 cup Bisquick or similar baking mix

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a 12-cup muffin tin with cooking spray or line with paper liners.
  2. Beat the eggs in a medium bowl until uniform and slightly frothy, about 30 seconds.
  3. Add the baking mix and stir until just combined (a few lumps are fine).
  4. Fold in the shredded cheese, cooked chicken, and frozen vegetables until evenly distributed.
  5. Let the batter rest for 5 minutes.
  6. Scoop the batter into the prepared muffin tin, filling each cup almost to the top.
  7. Bake for 18-20 minutes, until golden brown and a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.
