  • 12 ounces fresh or frozen cranberries (about 3 cups)
  • 1 cup granulated sugar
  • 1 cup fresh orange juice (from about 2 large oranges)
  • Zest of 1 large orange
  • 2 tablespoons fresh ginger, finely grated
  • Pinch of salt
  • 1 cinnamon stick (optional)
  • 2 tablespoons orange liqueur like Grand Marnier or Cointreau (optional)
  • ¼ teaspoon vanilla extract (optional)

Instructions

  1. Prepare your ingredients: zest the orange (about 1 tablespoon), juice the orange to get 1 cup of juice, and grate the ginger (about 2 tablespoons). Set aside.
  2. In a medium saucepan, combine 1 cup sugar and 1 cup fresh orange juice. Stir over medium heat until the sugar is completely dissolved, about 2-3 minutes.
  3. Add the 12 ounces of cranberries and 2 tablespoons of grated ginger. Stir well. If using a cinnamon stick, add it now.
  4. Increase heat to high and bring the mixture to a full boil. The cranberries will start to pop. Once boiling, reduce heat to medium-low and let it simmer for 10-12 minutes, stirring occasionally.
  5. Test for doneness: take a spoonful of sauce and let it cool for a few seconds. It should coat the back of a spoon and hold its shape slightly when you run your finger through it. If too thin, simmer 2-3 more minutes; if too thick, add a splash of orange juice or water.
  6. Remove from heat. Stir in the orange zest and a pinch of salt. If using a cinnamon stick, remove it now.
  7. Let the sauce cool in the pot for about 10 minutes, then transfer to a serving bowl or glass jar. Serve warm, at room temperature, or chilled.

Notes

For a smoother sauce, blend with an immersion blender or in a regular blender after step 6 (let cool 10 minutes first). The flavors improve after a day in the fridge. Start with 2 tablespoons of ginger and taste before adding more. If using frozen cranberries, add 2-3 extra minutes of cooking time.
