A happy kitchen accident turned into a stunning fall dish: tender roasted acorn squash halves filled with a savory wild rice, mushroom, and pecan stuffing. Perfect for holiday tables, potlucks, or a cozy dinner that looks impressive with minimal effort.

Ingredients

Scale
  • 3 medium acorn squash, halved and seeded
  • 1 cup wild rice, uncooked
  • 2 cups low-sodium vegetable broth
  • 1 medium yellow onion, diced
  • 8 ounces cremini mushrooms, chopped
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 1/3 cup dried cranberries
  • 1/3 cup pecans, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 teaspoon fresh thyme leaves
  • 3 tablespoons olive oil, divided
  • 1 tablespoon maple syrup
  • Salt and black pepper to taste
  • 1/3 cup feta cheese, crumbled (optional, or vegan feta)
  • Fresh parsley for garnish (optional)

Instructions

  1. Rinse 1 cup wild rice under cold water. In a medium saucepan, combine rice, 2 cups vegetable broth, and a pinch of salt. Bring to a boil, reduce heat to low, cover, and simmer for 40-50 minutes until grains split open and are tender but chewy. Drain excess liquid if needed. Set aside.
  2. Preheat oven to 400°F (200°C). Cut each acorn squash in half from stem to tip. Scoop out seeds and stringy pulp. Brush cut sides and cavities with 1 tablespoon olive oil and drizzle with 1 tablespoon maple syrup. Season with salt and pepper. Place squash cut-side down on a parchment-lined baking sheet.
  3. Roast squash cut-side down for 20-25 minutes until just tender when pierced with a fork but still holds shape (about 75% cooked).
  4. While squash roasts, heat 2 tablespoons olive oil in a large skillet over medium heat. Add diced onion and celery; cook 4-5 minutes until softened. Add chopped mushrooms; cook 5-7 minutes until they release liquid and begin to brown. Add minced garlic, sage, and thyme; cook 1 minute until fragrant. Season with salt and pepper.
  5. Remove skillet from heat. Stir in cooked wild rice, dried cranberries, and chopped pecans. If using feta, fold in half now; reserve rest for topping. Adjust seasoning.
  6. Remove par-baked squash from oven; flip cut-side up. Divide filling evenly among cavities, mounding slightly. Return to oven and bake 20-25 minutes until squash is tender and filling is heated through and lightly browned. For extra color, broil last 2 minutes.
  7. Remove from oven; let rest 5 minutes. Sprinkle with remaining feta and fresh parsley. Serve warm.

Notes

Don’t skip the par-bake step—it ensures tender squash and moist filling. For safety, slice a thin piece off the bottom of each squash so it sits flat before halving. Toast pecans in a dry skillet for 2-3 minutes for best flavor. The filling can be made up to 2 days ahead and refrigerated. For a vegan version, omit feta or use vegan feta.
