A quick and easy chicken salad made with rotisserie chicken, juicy red grapes, crunchy pecans, and a creamy dressing. Perfect for busy weekdays, meal prep, or potlucks.

  • 3 cups cooked chicken, shredded or diced
  • 1 cup red seedless grapes, halved
  • 1/2 cup pecans, chopped
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon fresh lemon juice
  • Salt and black pepper to taste
  • Optional: fresh dill or chives, paprika, garlic powder, dried cranberries

Instructions

  1. Toast the pecans in a small skillet over medium heat for 2-3 minutes, stirring frequently, until fragrant. Transfer to a plate to cool completely.
  2. Rinse and halve the grapes. Set aside.
  3. Shred the cooked chicken into bite-sized pieces.
  4. In a small bowl, whisk together mayonnaise, Greek yogurt, lemon juice, salt, and pepper.
  5. In a large mixing bowl, combine shredded chicken, halved grapes, and cooled pecans. Pour the dressing over the top and fold gently until evenly coated.
  6. Cover and refrigerate for at least 30 minutes before serving to let flavors meld. Serve cold or at room temperature.

Notes

Toast pecans for best flavor. Add pecans just before serving to keep them crunchy. For dairy-free, use all mayonnaise instead of Greek yogurt. Store in an airtight container in the fridge for up to 4 days. Do not freeze.
