  • 810 medium fresh jalapeños
  • 8 oz cream cheese, softened
  • 1620 slices thin-cut bacon
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ¼ cup shredded cheddar cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside a rimmed baking sheet.
  2. Wash and dry 8-10 medium jalapeños. Slice each one in half lengthwise. Use a small spoon to scrape out the white membranes and seeds.
  3. In a small bowl, combine 8 oz softened cream cheese, ½ teaspoon garlic powder, ½ teaspoon onion powder, ¼ teaspoon salt, and ⅛ teaspoon black pepper. If using, stir in ¼ cup shredded cheddar cheese. Mix until smooth.
  4. Spoon or pipe the cream cheese mixture into each jalapeño half, filling them level with the cut edge.
  5. Cut 16-20 slices of thin-cut bacon in half crosswise. Wrap one bacon half around each filled jalapeño half, slightly overlapping the ends. Place seam-side down on the wire rack. Secure with toothpicks if needed.
  6. Bake for 20-25 minutes, until bacon is crispy and deep golden brown and cream cheese is bubbling slightly.
  7. Let the poppers cool on the rack for 5 minutes before serving.

Notes

Don’t skip the wire rack for crispy bacon all around. Thin-cut bacon is non-negotiable. Let cream cheese soften properly for smooth filling. Watch oven closely at the end to avoid burning. Double the batch if serving a crowd.
