These cinnamon sugar pumpkin seeds are a quick and easy snack that kids love. With a double-coating method using egg white, they achieve a perfect crackly crunch that’s irresistible.

Ingredients

Scale
  • 1 cup (120g) fresh pumpkin seeds, cleaned and dried
  • 2 tablespoons (28g) unsalted butter, melted
  • 3 tablespoons (36g) granulated sugar
  • 1½ teaspoons ground cinnamon
  • 1 large egg white
  • ⅛ teaspoon salt
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Clean and dry your pumpkin seeds thoroughly. Rinse fresh seeds in a colander under cool water to remove pulp, then pat completely dry with a clean kitchen towel or paper towels.
  3. In a small bowl, combine the sugar, cinnamon, and salt. Whisk together until evenly distributed.
  4. In a medium bowl, whisk the egg white until frothy and slightly opaque, about 30 seconds. If using vanilla extract, add it now and whisk once more.
  5. Add the dried pumpkin seeds to the frothy egg white and stir with a spatula until every seed is coated.
  6. Pour the cinnamon sugar mixture over the coated seeds and toss until evenly coated.
  7. Spread the coated seeds in a single layer on the prepared baking sheet, breaking up any big clumps.
  8. Bake for 20-25 minutes, stirring halfway through at the 10-minute mark. Seeds are done when golden brown and fragrant.
  9. Let them cool completely on the baking sheet, about 15-20 minutes, to allow them to crisp up.
  10. Break apart any clumps with your fingers and transfer to a bowl.

Notes

Don’t skip the egg white—it creates a shatteringly crisp coating. Watch the oven closely as seeds can burn quickly. Double the batch if desired; they freeze well. Let kids help with the coating step for fun. Use room temperature egg white for better frothing.
