Tender, fall-apart pork chops swimming in a rich, silky onion gravy made entirely in the slow cooker. This hands-off recipe is perfect for entertaining and uses simple pantry ingredients.

Ingredients

Scale
  • 4 bone-in pork chops (about 1 inch thick, 8 ounces each)
  • 2 tablespoons olive oil
  • 3 large yellow onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon salt
  • 2 tablespoons cornstarch mixed with 2 tablespoons cold water (slurry)
  • Fresh parsley, chopped (for garnish)
  • Mashed potatoes or egg noodles (for serving)
  • Steamed green beans or roasted carrots (for serving)

Instructions

  1. Pat the pork chops dry with paper towels. Season both sides with salt and pepper. Let sit at room temperature for 10 minutes.
  2. Slice onions into thin half-rings.
  3. Heat olive oil in a large skillet over medium-high heat. Sear pork chops for 3-4 minutes per side until deeply golden brown. Transfer to a plate.
  4. Reduce heat to medium. Add sliced onions to the skillet, scraping up browned bits. Cook for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds.
  5. Spread half the onion mixture across the bottom of a 6-quart slow cooker. Place seared pork chops on top in a single layer. Cover with remaining onions.
  6. Pour chicken broth and Worcestershire sauce over everything. Sprinkle thyme, smoked paprika, and any remaining salt and pepper on top. Do not stir.
  7. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until pork chops are fork-tender.
  8. Carefully transfer pork chops to a serving platter and tent with foil. Strain cooking liquid into a saucepan or use a slotted spoon to remove onions. Whisk in cornstarch slurry and bring to a simmer over medium heat. Cook for 2-3 minutes until thickened. Adjust seasoning.
  9. Serve immediately: spoon gravy over pork chops, garnish with parsley, and serve with mashed potatoes or egg noodles.

Notes

Don’t skip the sear—it builds deep flavor. Bone-in chops are more forgiving and add more flavor. For a gluten-free option, use tamari instead of Worcestershire sauce. The dish holds well on ‘warm’ setting for up to an hour.
