This Easy No-Bake Fall Chocolate Chex Mix is a quick, crunchy, and chocolatey snack that comes together in minutes without turning on the oven. Perfect for fall gatherings, cozy nights, or holiday parties, it’s a crowd-pleaser with festive mix-ins like candy corn and autumn M&Ms.

Ingredients

Scale
  • 12 ounces semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 9 cups Rice Chex cereal
  • 1 cup salted pretzel twists, broken into bite-sized pieces
  • 1 cup roasted salted peanuts
  • 1 cup candy corn
  • 1/2 cup autumn-themed M&Ms
  • 1/2 cup dried cranberries
  • 1/4 cup pumpkin seeds (pepitas), optional

Instructions

  1. Line a large baking sheet with parchment paper or wax paper. Set aside.
  2. In a very large mixing bowl, combine 9 cups Rice Chex cereal, 1 cup broken pretzel pieces, and 1 cup roasted salted peanuts. Gently toss to distribute evenly.
  3. In a microwave-safe bowl, combine 12 ounces semi-sweet chocolate chips, 1/2 cup creamy peanut butter, and 1/4 cup unsalted butter. Microwave in 30-second intervals, stirring well after each, until smooth and glossy (about 90 seconds total). Stir in 1 teaspoon vanilla extract and 1/4 teaspoon salt.
  4. Pour the warm chocolate mixture over the cereal mixture. Using a silicone spatula, gently fold until every piece is evenly coated.
  5. Transfer the coated mixture to the prepared baking sheet and spread into an even, single layer. While the chocolate is still wet, sprinkle candy corn, autumn M&Ms, dried cranberries, and pumpkin seeds over the top. Gently press them in.
  6. Refrigerate for 30-45 minutes, or until the chocolate is completely firm. For a quicker set, freeze for 15-20 minutes.
  7. Once set, break the mix into clusters. Serve at room temperature.

Notes

For best results, use room temperature peanut butter and butter. Avoid overheating the chocolate; melt in short intervals. If the mixture thickens before fully mixed, microwave for 10 seconds to loosen. For extra flavor, toast the peanuts in a dry skillet for 3-4 minutes before adding. Store in an airtight container at room temperature for up to 1 week, or refrigerate for up to 2 weeks. For longer storage, freeze for up to 3 months. Add candy corn and M&Ms just before serving for best texture if making ahead.
