These creamy, no-cook overnight oats are packed with peanut butter and banana flavor. They come together in just 10 minutes and make a perfect make-ahead breakfast or brunch dish.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (dairy or non-dairy)
  • 1/4 cup (64g) creamy peanut butter
  • 1 medium ripe banana (about 120g mashed)
  • 2 tablespoons (30ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • 1/8 teaspoon salt
  • Optional toppings: sliced banana, extra peanut butter, chopped peanuts, dark chocolate chips

Instructions

  1. Mash the banana in a medium mixing bowl until mostly smooth with a few small lumps.
  2. Add the peanut butter, milk, maple syrup or honey, and vanilla extract. Whisk until smooth and fully combined.
  3. Stir in the rolled oats and chia seeds (if using) until all oats are coated.
  4. Add a pinch of salt and stir once more.
  5. Divide the mixture evenly into 4 small (8-ounce) jars or 2 larger containers, leaving about 1/2 inch of space at the top.
  6. Cover tightly and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  7. In the morning, stir the oats, add desired toppings, and serve cold or at room temperature.

Notes

For best texture, use old-fashioned rolled oats, not instant or steel-cut. Mash the banana thoroughly to avoid chunks. If using natural peanut butter, stir well and warm slightly before mixing. Add toppings just before serving to keep them fresh. Oats can be stored in the fridge for up to 5 days; texture is best within the first 3 days. To reheat, microwave for 30-45 seconds and stir well.
