  • 12 habanero peppers, stemmed and seeded
  • 1 medium yellow onion, chopped
  • 3 garlic cloves, smashed
  • 1/2 cup apple cider vinegar

  • 2 tablespoons fresh lime juice
  • 1 teaspoon salt
  • 1/4 cup water, plus more as needed

Instructions

  1. Prep your produce: Peel and chop the peaches into 1-inch chunks. Stem the habaneros, cut them in half, and scrape out the seeds and white pith with a small spoon (wear gloves). Roughly chop the onion and smash the garlic cloves.
  2. Caramelize the aromatics: Heat a tablespoon of olive oil or a splash of water in a saucepan over medium heat. Add the chopped onion and cook, stirring occasionally, for 5-7 minutes until soft and translucent. Add the smashed garlic and cook for another minute until fragrant.
  3. Add the heat: Toss in the chopped habanero peppers. Cook for 1-2 minutes, stirring constantly.
  4. Introduce the fruit: Add the chopped peaches to the pot. Stir and cook for about 5 minutes until the peaches start to break down and release their juices.
  5. Simmer the base: Pour in the apple cider vinegar, honey, lime juice, salt, and water. Stir to combine. Bring to a gentle simmer, then reduce heat to low. Cook for 10-15 minutes, stirring occasionally, until the peaches are completely soft and flavors meld.
  6. Cool slightly: Remove the pot from the heat and let it cool for 5-10 minutes.
  7. Blend until smooth: Carefully transfer the mixture to a blender. Start on low speed and gradually increase to high. Blend for 30-60 seconds until completely smooth and glossy. Add water a tablespoon at a time if needed to reach desired consistency.

Notes

For a milder sauce, use only one habanero and remove all seeds and pith. The flavor improves after a day or two in the fridge. Wear gloves when handling habaneros. Let the mixture cool before blending to avoid pressure buildup.
