This moist, tender zucchini walnut bread is a quick and easy recipe that uses simple pantry ingredients. It’s perfect for busy families, kid-approved, and budget-friendly, turning a single zucchini into a delicious loaf that stays fresh for days.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 ½ teaspoons pumpkin pie spice
  • 1 cup granulated sugar
  • 2 large eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups grated zucchini
  • ½ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan thoroughly with butter or non-stick spray.
  2. Wash and trim the zucchini. Grate using the large holes of a box grater. Place the grated zucchini in a clean kitchen towel or paper towels and squeeze firmly to remove as much liquid as possible. Set aside.
  3. In a large mixing bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice for about 20 seconds.
  4. In a medium mixing bowl, whisk together the sugar, eggs, vegetable oil, and vanilla extract until smooth, pale yellow, and slightly thickened (about 1 minute).
  5. Pour the wet ingredients into the dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not over-mix.
  6. Fold in the squeezed zucchini and chopped walnuts until evenly distributed.
  7. Pour the batter into the prepared loaf pan and spread evenly. Bake for 50 to 60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Remove from oven and place on a cooling rack. Cool in the pan for 15 minutes, then run a knife around the edges and turn out onto the rack. Cool completely before slicing.

Notes

Squeeze the zucchini thoroughly to remove excess moisture for a light, tender crumb. Toast walnuts for 5 minutes at 350°F for deeper flavor. Let the bread cool completely before slicing to prevent crumbling. The bread keeps at room temperature for up to 4 days and freezes well for up to 3 months.
