Ingredients

Scale
  • 2 pounds fresh strawberries, hulled and sliced
  • 1/2 cup granulated sugar, divided
  • 1 teaspoon balsamic vinegar
  • 2 cups heavy whipping cream, cold
  • 4 ounces cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 1/2 teaspoons vanilla extract
  • Zest of 1 lemon
  • About 60 vanilla wafer cookies (one 12-ounce box)
  • Optional garnish: fresh mint leaves and additional sliced strawberries

Instructions

  1. Macerate the strawberries: In a medium bowl, combine sliced strawberries with 1/4 cup granulated sugar and balsamic vinegar. Stir gently and let sit at room temperature for 15-20 minutes until berries release their juices.
  2. Prepare the pan: Line a 9×5-inch loaf pan with plastic wrap or parchment paper, leaving overhang on the long sides.
  3. Make the cream filling: In a large bowl, beat softened cream cheese with an electric mixer on medium speed until smooth, about 1 minute. Add powdered sugar and beat until fluffy and lump-free.
  4. Whip the cream: Pour cold heavy cream into the bowl with cream cheese mixture. Add vanilla extract and lemon zest. Beat on low speed, gradually increasing to medium-high, until stiff peaks form (3-4 minutes).
  5. Drain the strawberries: Pour macerated strawberries into a fine-mesh strainer set over a bowl. Reserve the syrup. Let drain for 1-2 minutes.
  6. Start layering: Spread a thin layer (about 1/4 cup) of cream mixture on the bottom of the lined pan. Arrange a single layer of vanilla wafers on top, breaking cookies to fill gaps.
  7. Add the strawberry layer: Spoon about one-third of the drained strawberries over the cookies. Drizzle about 1 tablespoon of reserved syrup over berries. Spread about one-third of the remaining cream mixture on top.
  8. Repeat layers: Add another layer of cookies, another third of strawberries with a drizzle of syrup, and another third of cream. Repeat once more, ending with a final layer of cream on top. Spread smooth.
  9. Cover and chill: Fold overhanging plastic wrap over the top or cover tightly. Refrigerate for at least 6 hours, preferably overnight.
  10. Unmold and serve: Uncover pan, invert onto a serving plate, lift off pan, and peel away plastic wrap. Slice with a sharp knife, wiping blade clean between cuts. Garnish with mint and extra strawberries if desired.

Notes

Don’t skip the cream cheese—it stabilizes the whipped cream for clean slices. Keep all ingredients cold for best whipping. Drain strawberries well to avoid a soggy cake. Chill for at least 6 hours, but overnight is better for ideal texture. The cake improves with time and is best on day 2.
