This keto chocolate lava cake is rich, decadent, and surprisingly easy to make. With a tender almond flour cake and a molten chocolate center, it’s the perfect low-carb dessert that even non-keto eaters will love.

Ingredients

Scale
  • 1/2 cup (60g) almond flour
  • 1/4 cup (30g) unsweetened cocoa powder
  • 1/2 cup (120g) unsalted butter, softened
  • 1/2 cup (100g) powdered erythritol
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup (60ml) heavy cream
  • 2 ounces (60g) dark chocolate (85% cocoa or higher)
  • 1 tablespoon coconut oil
  • Fresh raspberries or strawberries (optional, for serving)
  • Sugar-free whipped cream (optional, for serving)
  • Mint leaves (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C). Grease four 6-ounce ramekins generously with butter or coconut oil.
  2. In a double boiler or microwave, melt the dark chocolate and coconut oil together until smooth. Set aside to cool slightly.
  3. In a medium bowl, whisk together the almond flour, cocoa powder, salt, and powdered erythritol.
  4. In a larger bowl, whisk the room-temperature eggs until light and frothy, about 1 minute. Add the softened butter and vanilla extract, and whisk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, stirring with a rubber spatula until just combined. Do not overmix.
  6. Fold in the melted chocolate mixture until fully incorporated. Then stir in the heavy cream.
  7. Divide the batter evenly among the prepared ramekins, filling them about three-quarters full. Place the ramekins on a baking sheet.
  8. Bake for 12-14 minutes, until the edges are set and the centers jiggle when gently shaken.
  9. Remove from the oven and let cool on a wire rack for exactly 1 minute.
  10. Run a thin knife around the edge of each ramekin to loosen the cake. Invert onto a serving plate and lift off the ramekin.
  11. Serve immediately, garnished with fresh berries, whipped cream, and mint if desired.

Notes

Room temperature ingredients are crucial for a smooth batter. Watch the baking time closely; overbaking will result in a fully cooked cake with no lava center. For make-ahead, prepare the batter up to 24 hours in advance, refrigerate, and let sit at room temperature for 15 minutes before baking.
