  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 12 slider buns (Hawaiian rolls recommended)
  • 4 slices provolone or cheddar cheese, cut into quarters (optional)
  • Butter lettuce leaves
  • Pickle slices (optional)

Instructions

  1. Make the spicy mayo first. In a small bowl, whisk together the mayonnaise, sriracha, pickle brine, smoked paprika, and garlic powder. Taste and adjust. Cover and set aside for at least 10 minutes.
  2. Prepare the turkey patties. In a large mixing bowl, combine the ground turkey, breadcrumbs, beaten egg, garlic powder, onion powder, salt, and pepper. Mix gently with your hands until just combined, about 30 seconds.
  3. Form the patties. Divide the mixture into 12 equal portions. Roll each into a ball, then flatten into a patty about 2 inches wide and 1/2 inch thick. Place on a plate or baking sheet.
  4. Cook the patties. Heat the olive oil in a large skillet over medium-high heat. Add the patties in a single layer (work in batches if needed). Cook for 3-4 minutes per side until golden brown and cooked through (internal temperature of 165°F).
  5. Toast the buns. While the patties cook, slice the slider buns in half. Spread a thin layer of the spicy mayo on the cut sides of both the top and bottom buns. Toast on a baking sheet or in the skillet for 1-2 minutes until golden and fragrant.
