This is the banana bread you will actually want to make again and again. Not because it is fancy, but because it works. Quick & easy, simple ingredients, and unbelievably moist.

  • 3 medium ripe bananas (about 1 ½ cups mashed)
  • ½ cup (1 stick) unsalted butter, melted
  • ¾ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup chopped walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×5-inch loaf pan with parchment paper, leaving some overhang on the long sides. Grease the parchment lightly with butter or non-stick spray.
  2. In a large bowl, mash the ripe bananas with a fork or potato masher until they are mostly smooth with a few small lumps. You want about 1 ½ cups of mashed bananas.
  3. Add the melted butter, granulated sugar, eggs, and vanilla extract to the mashed bananas. Whisk everything together until it is smooth and well combined.
  4. In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.
  5. Pour the dry ingredients into the wet mixture. Use a rubber spatula or wooden spoon to fold gently. Stir just until you no longer see streaks of flour. A few lumps are fine.
  6. Gently fold in the chopped walnuts until they are evenly distributed throughout the batter.
  7. Pour the batter into the prepared loaf pan. Use your spatula to spread it evenly and smooth the top. Tap the pan gently on the counter a few times to release any air bubbles.
  8. Place the pan in the preheated oven and bake for 55-65 minutes. The bread is done when a toothpick inserted into the center comes out clean or with just a few moist crumbs. If the top is browning too quickly after 40 minutes, tent the pan loosely with aluminum foil.
  9. Let the bread cool in the pan on a wire rack for 15 minutes. Then, use the parchment paper to lift it out and transfer it to the rack to cool completely.

Notes

Do not overmix the batter. Use room temperature ingredients. Measure your flour correctly by spooning it into the cup and leveling it off. Toast your walnuts for extra flavor. Check for doneness early. Let it cool completely before slicing. The flavors deepen after a day or two.
