Best Savory Sweet Grilled Peach & Burrata Salad Recipe

A quick and impressive summer salad featuring smoky grilled peaches, creamy burrata, peppery arugula, and a tangy balsamic vinaigrette. Ready in under 20 minutes, it’s perfect for weeknight dinners or backyard entertaining.

  • 4 medium ripe but firm peaches
  • 8 ounces burrata cheese
  • 4 cups arugula or mixed greens
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • ¼ cup fresh basil leaves, loosely packed
  • Flaky sea salt and cracked black pepper to taste
  • 4 ounces prosciutto (optional)
  • 2 tablespoons toasted pine nuts (optional)

Instructions

  1. Wash and dry peaches. Cut each in half along the natural seam, twist to separate, and remove the pit. Brush cut sides lightly with honey.
  2. In a small bowl, whisk together olive oil, balsamic vinegar, a pinch of salt, and a few cracks of black pepper to make the vinaigrette. Set aside.
  3. Heat a grill or grill pan over medium-high heat. Place peach halves cut-side down and cook undisturbed for 3-4 minutes until deep grill marks appear. Flip and cook for another 2-3 minutes on the skin side. Transfer to a plate and let cool slightly.
  4. Arrange arugula on a large serving platter in an even layer. Drizzle about half the vinaigrette over the greens and toss gently.
  5. Pat burrata dry with a paper towel. Tear the cheese into pieces with your hands and arrange over the arugula.
  6. Place grilled peach halves around the burrata, cut-side up. Tuck a few pieces into the greens.
  7. Drizzle remaining vinaigrette over everything. Scatter torn basil leaves on top. If using, tear prosciutto into ribbons and drape over the salad. Sprinkle with flaky sea salt and cracked black pepper. Add toasted pine nuts if desired. Serve immediately.

Bring burrata to room temperature before serving for best creaminess. Don’t skip the honey on peaches—it creates a caramelized crust. Watch grill time carefully; peaches go from perfect to mushy quickly. For a vegan version, swap burrata for cashew cheese and use maple syrup instead of honey.
