These sticky honey garlic pork chops are the ultimate weeknight dinner—ready in under 30 minutes with just one pan. The glaze caramelizes into a glossy, sweet-savory coating that keeps the pork tender and juicy, making it a simple yet impressive meal.

Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick (roughly 6 ounces each)
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 4 cloves fresh garlic, minced
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon cornstarch mixed with 2 teaspoons water (slurry)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: sliced green onions, toasted sesame seeds, red pepper flakes for garnish

Instructions

  1. Preheat your oven to 400°F. Position the rack in the middle.
  2. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
  3. Heat your oven-safe skillet over medium-high heat on the stovetop. Add 2 tablespoons of olive oil. Wait until the oil shimmers and just starts to smoke.
  4. Sear the pork chops for 3-4 minutes on the first side without moving them. Flip and sear for another 2-3 minutes on the second side. Transfer to a plate and set aside.
  5. Reduce the heat to medium and add the minced garlic to the skillet. Stir constantly for about 30 seconds until fragrant.
  6. Pour in the honey, soy sauce, ketchup, rice vinegar, and sesame oil. Whisk together, scraping up any browned bits from the bottom of the pan.
  7. Bring the sauce to a gentle simmer and let it cook for 2-3 minutes, stirring occasionally. If you want a thicker glaze, stir in the cornstarch slurry now and cook for another minute until glossy.
  8. Return the pork chops to the skillet, nestling them into the sauce. Spoon some of the glaze over the tops of the chops.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the internal temperature of the pork reaches 145°F.
  10. Remove from the oven and let the pork chops rest in the skillet for 5 minutes.
  11. Spoon the pan sauce over the chops before serving. Garnish with sliced green onions and toasted sesame seeds if desired.

Notes

For best results, use 1-inch thick pork chops. Don’t skip the sear—it builds flavor. Let the pork rest for 5 minutes after baking to keep it juicy. If the glaze gets too thick in the oven, stir in a tablespoon of water when removing the skillet. Bone-in pork chops work well too; add 5-7 minutes to baking time.
