Ingredients

Scale
  • 2 pounds ground beef (80/20)
  • 1/2 pound ground pork
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup breadcrumbs (plain or Italian-style)
  • 1/2 cup whole milk
  • 2 large eggs, lightly beaten
  • 2 tablespoons Worcestershire sauce
  • 1/4 cup ketchup
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)
  • 1/2 cup ketchup (for glaze)
  • 1/3 cup brown sugar, packed
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce (for glaze)
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×5-inch loaf pan with oil or non-stick spray.
  2. In a large mixing bowl, combine 1 cup breadcrumbs and 1/2 cup whole milk. Stir and let sit for 5 minutes to form a panade.
  3. Heat a small skillet over medium heat with a drizzle of oil. Add the finely diced onion and cook for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Remove from heat and let cool slightly.
  4. To the bowl with the panade, add ground beef, ground pork, sautéed onions and garlic, beaten eggs, 1/4 cup ketchup, 2 tablespoons Worcestershire sauce, dried thyme, salt, and pepper. Mix gently with your hands until just combined.
  5. Transfer the meat mixture to the prepared loaf pan and press gently into an even shape, removing any air pockets.
  6. In a small bowl, whisk together 1/2 cup ketchup, packed brown sugar, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder to make the glaze.
  7. Bake the meatloaf for 45 minutes.
  8. Remove from oven and spoon half of the glaze over the top. Return to oven and bake for 15 minutes.
  9. Apply the remaining glaze and bake for another 10-15 minutes, until internal temperature reaches 160°F (71°C).
  10. Let the meatloaf rest in the pan for 10-15 minutes before slicing. Serve warm, spooning extra glaze from the pan over the top.

Notes

Don’t skip the panade—it keeps the meatloaf moist. Let the meatloaf rest before slicing to retain juices. Use a meat thermometer for perfect doneness. Line the pan with parchment paper for easy cleanup. For a turkey version, use 2.5 pounds ground turkey (93/7) and add an extra tablespoon of olive oil.
