  • 1 can (12 oz) evaporated milk
  • 1 box (15.25 oz) yellow cake mix
  • 1/2 cup (1 stick) cold unsalted butter
  • 2 teaspoons pumpkin pie spice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the pumpkin puree, evaporated milk, and pumpkin pie spice. Whisk until smooth and well combined.
  3. Pour the pumpkin mixture into an ungreased 9×13-inch baking dish. Spread it evenly.
  4. Sprinkle the entire box of yellow cake mix evenly over the pumpkin mixture. Do not stir.
  5. Slice the cold butter into thin pats, about 1/8-inch thick. Arrange the butter slices evenly over the entire surface of the cake mix.
  6. Bake for 45-50 minutes, or until the top is golden brown and the edges are bubbly. Let cool for at least 15 minutes before serving.

Notes

For a crispier topping, use cold butter sliced thin. Place the baking dish on a rimmed baking sheet to catch any overflow. Let the cake cool for at least 15-20 minutes before serving to allow the pumpkin layer to set.
