This Cozy Apple Cider Mimosa is the perfect fall brunch drink, combining crisp, chilled apple cider with dry sparkling wine for a balanced, festive sip. It’s incredibly easy to make with just two main ingredients and is sure to please a crowd.

Ingredients

Scale
  • 1 cup (240 ml) apple cider, chilled
  • 1 bottle (750 ml) dry sparkling wine (prosecco, cava, or champagne), chilled
  • 4–6 cinnamon sticks, for garnish
  • 4–6 thin apple slices, for garnish
  • 1–2 tablespoons maple syrup (optional, to taste)
  • 1–2 ounces bourbon or spiced rum per glass (optional)

Instructions

  1. Chill the apple cider and sparkling wine thoroughly (at least 2 hours in the fridge).
  2. Prepare garnishes: wash and dry apples, cut thin round slices and halve them. Set cinnamon sticks aside.
  3. Measure 1 cup (240 ml) of apple cider for a 750 ml bottle of sparkling wine (or 2 oz cider per glass).
  4. Optional: rim glasses with cinnamon sugar by running an apple slice around the rim and dipping in cinnamon sugar.
  5. For a pitcher: pour chilled cider into pitcher, then slowly pour in chilled sparkling wine. Gently stir once or twice.
  6. Pour into glasses, tilting each glass slightly and pouring down the side to preserve bubbles. Fill about 3/4 full.
  7. Add a cinnamon stick and an apple slice to each glass. Serve immediately.

Notes

Chill all ingredients thoroughly to preserve bubbles. Pour sparkling wine slowly to avoid losing carbonation. Serve immediately; bubbles fade within 15-20 minutes. For a non-alcoholic version, use dry sparkling water or non-alcoholic sparkling wine.
