Ingredients

Scale
  • 4 medium apples (about 680g), peeled, cored, and sliced into 1/4-inch pieces (Honeycrisp or Granny Smith recommended)
  • 1½ cups (150g) fresh or frozen cranberries (do not thaw if frozen)
  • ½ cup (100g) granulated sugar
  • 1 tablespoon orange zest (from about 1 large orange)
  • 2 tablespoons (30ml) freshly squeezed orange juice
  • 2 tablespoons (16g) cornstarch
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 1 cup (90g) rolled oats (old-fashioned)
  • ¾ cup (90g) all-purpose flour
  • ½ cup (100g) packed brown sugar (light or dark)
  • ½ cup (113g) cold unsalted butter, cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (60g) chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Place a baking sheet on the lower rack to catch any drips.
  2. Prepare the fruit filling: In a large bowl, combine the sliced apples, cranberries, granulated sugar, orange zest, orange juice, cornstarch, cinnamon, and vanilla extract. Toss until the fruit is evenly coated. Let it sit for about 10 minutes while you make the streusel.
  3. Make the buttery oat streusel: In a medium bowl, whisk together the rolled oats, flour, brown sugar, cinnamon, and salt. Add the cold butter cubes and cut them into the dry mixture using a pastry cutter or two forks until pea-sized pieces of butter form. If using pecans, stir them in at the end. The mixture should look crumbly and uneven.
  4. Assemble the crisp: Pour the fruit filling into a 9×13-inch baking dish and spread it into an even layer. Sprinkle the streusel evenly over the top. Do not press it down; some fruit should peek through.
  5. Bake for 40 to 45 minutes, until the fruit is bubbling around the edges and the streusel is deep golden brown. If the topping browns too quickly, tent the dish loosely with foil for the last 10 minutes.
  6. Cool for at least 15 minutes before serving. The filling needs time to set up. Serve warm.

Notes

For best results, keep the butter cold for the streusel. Slice apples evenly for uniform cooking. Let the crisp rest for at least 15 minutes before serving to allow the juices to thicken. The flavors deepen on the second day. For a gluten-free version, use a 1:1 gluten-free baking flour blend and certified gluten-free oats. For a dairy-free version, use cold coconut oil or vegan butter.
