Ingredients

Scale
  • 4 cups fresh peaches, peeled and sliced (about 600g)
  • 1/2 cup granulated sugar (100g)
  • 1/4 cup brown sugar (50g)
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons bourbon
  • 1 tablespoon cornstarch
  • Pinch of salt
  • 2 cups all-purpose flour (250g), sifted
  • 1 tablespoon baking powder
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter (115g), cold and cubed
  • 3/4 cup whole milk (180ml), cold
  • 1 teaspoon vanilla bean paste

Instructions

  1. Prepare the Peach Filling (15 minutes): In a large bowl, combine sliced peaches, granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, bourbon, cornstarch, and a pinch of salt. Toss gently to coat the peaches evenly. Set aside and let the mixture macerate.
  2. Preheat the Oven: Set your oven to 375°F (190°C) and position a rack in the middle.
  3. Make the Biscuit Dough (10-15 minutes): In a separate large bowl, whisk together the sifted flour, baking powder, sugar, and salt. Add the cold, cubed butter. Using a pastry cutter or two forks, cut the butter into the flour mixture until it resembles coarse crumbs with pea-sized bits.
  4. Add the cold milk and vanilla bean paste to the flour mixture. Stir gently with a wooden spoon until the dough just comes together. Do not overmix.
  5. Assemble the Cobbler (5 minutes): Pour the peach mixture into your greased 9×9-inch baking dish, spreading it evenly. Drop spoonfuls of the biscuit dough over the peaches, leaving some gaps.
  6. Bake (35-40 minutes): Place the cobbler in the oven. Bake until the peach juices are bubbly and the biscuits are golden brown. If biscuits brown too quickly, tent loosely with foil after 25 minutes.
  7. Cool Slightly Before Serving (10 minutes): Let the cobbler rest to thicken the filling and make serving easier.

Notes

Use cold butter and do not overmix biscuit dough for flaky texture. Macerate peaches with sugar and bourbon before baking for juicy filling. Tent with foil if biscuits brown too fast. For dairy-free, substitute milk and butter with plant-based alternatives. Bourbon can be replaced with vanilla extract for non-alcoholic version.
