Ingredients

Scale
  • 6 medium apples (about 2.5 pounds), peeled, cored, and sliced into ¼-inch thick wedges (Honeycrisp, Granny Smith, or Braeburn recommended)
  • ½ cup packed brown sugar (light or dark)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice (freshly squeezed)
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • 1 cup rolled oats (old-fashioned, not quick-cooking)
  • ¾ cup all-purpose flour
  • ½ cup packed brown sugar (light or dark)
  • ½ cup cold unsalted butter (1 stick), cut into small cubes
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch or 9×9-inch baking dish with butter or non-stick spray.
  2. Make the apple filling: In a large bowl, combine sliced apples, ½ cup brown sugar, 2 tablespoons flour, lemon juice, 1 teaspoon cinnamon, nutmeg, and ¼ teaspoon salt. Toss until apples are evenly coated. Spread mixture evenly into prepared baking dish.
  3. Make the oat crumble topping: In a separate medium bowl, whisk together rolled oats, ¾ cup flour, ½ cup brown sugar, ½ teaspoon cinnamon, and ¼ teaspoon salt. Add cold cubed butter. Use a pastry cutter or fingertips to work butter into dry ingredients until mixture resembles coarse sand with some pea-sized butter pieces remaining. Do not overwork.
  4. Assemble and bake: Sprinkle oat crumble topping evenly over apples. Do not press down. Place dish on a baking sheet to catch any overflow. Bake for 40-45 minutes, until topping is golden brown and apple filling is bubbling around the edges. If topping browns too quickly, loosely tent with foil for last 10 minutes.
  5. Cool and serve: Let crisp cool on a wire rack for at least 10-15 minutes before serving. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

Keep butter cold for the crumble to ensure crispy clusters. Do not overmix the crumble; leave some butter chunks. Let the crisp cool for 10-15 minutes before serving to allow the filling to set. For a gluten-free version, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter. Add ¼ teaspoon ginger or cardamom for a spicier version. Toss in 1 cup fresh or frozen cranberries or raspberries for a berry twist. Add ½ cup chopped pecans or walnuts to the topping for extra crunch.
