This tender, spiced pumpkin cake is rolled around a luscious cream cheese filling for the ultimate fall dessert. It’s quick, easy, and perfect for Thanksgiving or cozy weekends.

  • 1/4 teaspoon ground cloves
  • 3 large eggs, room temperature
  • 3/4 cup (150g) granulated sugar
  • 2/3 cup (160g) pumpkin puree
  • 1 teaspoon vanilla extract
  • Powdered sugar, for dusting
  • 8 ounces (226g) cream cheese, softened
  • 1/4 cup (56g) unsalted butter, softened
  • 1 cup (120g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a 15×10-inch jelly roll pan with parchment paper, leaving overhang on long sides. Lightly grease parchment.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, and cloves. Set aside.
  3. In a large bowl, beat eggs and granulated sugar with an electric mixer on medium-high until thick and pale, about 2-3 minutes.
  4. Beat in pumpkin puree and vanilla extract until just combined.
  5. Gently fold dry ingredients into wet mixture using a spatula until no streaks of flour remain.
  6. Pour batter into prepared pan and spread evenly. Bake for 13-15 minutes, until top springs back when lightly touched and edges pull away from pan.
  7. While cake is warm, lay a clean kitchen towel flat on counter and dust generously with powdered sugar. Invert cake onto towel, peel off parchment. Starting from one short end, roll cake and towel together into a tight log. Cool completely on a wire rack (30-45 minutes).
  8. For filling: Beat softened cream cheese and butter together until smooth. Add sifted powdered sugar, vanilla, and pinch of salt; beat until fluffy.
  9. Once cake is completely cool, gently unroll. Spread cream cheese filling evenly over cake, leaving a 1/2-inch border.
  10. Carefully re-roll cake (without towel) into a tight log. Wrap in plastic wrap and refrigerate for at least 1 hour before serving.

Notes

Roll the cake while it’s still warm to prevent cracking. Use room temperature cream cheese and butter for a smooth filling. Chill the roll for at least 1 hour before slicing for clean cuts. If the cake cracks during final roll, press it back together—the filling will hide it.
