This cozy crispy baked chicken breast with herb butter is proof that simple ingredients, treated with a little care, can create something truly special. The herb butter keeps the meat impossibly juicy while the outside gets a shatteringly crisp finish.

Ingredients

Scale
  • 4 tablespoons unsalted butter, frozen
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon fresh rosemary, finely chopped
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon red pepper flakes (optional)
  • 2 large boneless, skinless chicken breasts (about 8 ounces each)
  • 1 tablespoon olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika
  • ¼ cup panko breadcrumbs

Instructions

  1. Preheat your oven to 425°F (220°C). Place a rack in the middle position. If using a cast-iron skillet, put it in the oven while it preheats.
  2. Prepare the herb butter: Grate the frozen butter into a small bowl using the large holes of a box grater. Add minced garlic, parsley, thyme, rosemary, salt, pepper, and red pepper flakes if using. Mix with a fork until well combined.
  3. Prep the chicken: Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, and paprika. Drizzle with olive oil and rub to coat evenly.
  4. Add the breadcrumbs: Sprinkle panko breadcrumbs onto a plate. Press each seasoned chicken breast into the breadcrumbs, coating both sides. Shake off excess.
  5. Apply the herb butter: Using your fingers, press the herb butter mixture onto the top of each chicken breast.
  6. Arrange on the baking sheet: Place a wire rack on your baking sheet (or remove the hot cast-iron skillet from the oven). Place the chicken breasts on the rack or in the skillet, butter-side up, leaving space between them.
  7. Bake for 20-25 minutes. At the 15-minute mark, check internal temperature with a meat thermometer. Target 160°F (71°C); it will rise to 165°F (74°C) while resting.
  8. Rest before serving: Remove from oven and let rest on the rack for 5 minutes to allow juices to redistribute.
  9. Serve: Transfer chicken to a plate and spoon any pan juices over the top. Garnish with fresh parsley if desired.

Notes

Grate the butter frozen for even distribution. Pat chicken dry for crispiness. Use a meat thermometer to avoid overcooking. Let chicken rest 5 minutes before cutting. Double the herb butter for extra use on vegetables or rice.
