This rich, velvety hot chocolate is made in a slow cooker with semi-sweet chocolate chips, cocoa powder, and a hint of cinnamon and cayenne. Perfect for Halloween parties or cozy nights in, it’s a crowd-pleaser that even hot chocolate skeptics will love.

Ingredients

Scale
  • 6 cups whole milk
  • 1 cup heavy cream
  • 1 ½ cups semi-sweet chocolate chips
  • ¼ cup unsweetened cocoa powder (Dutch-processed preferred)
  • ½ cup granulated sugar
  • 2 teaspoons vanilla extract
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon cayenne pepper (optional)
  • Pinch of salt
  • For serving (optional): whipped cream, chocolate shavings, cinnamon sticks, marshmallows

Instructions

  1. In a small bowl, whisk together cocoa powder, sugar, cinnamon, cayenne (if using), and salt to break up any clumps.
  2. Pour milk and heavy cream into a 6-quart or larger slow cooker. Add the dry mixture and whisk until fully combined.
  3. Sprinkle chocolate chips evenly over the surface. Do not stir yet.
  4. Cook on low for 2 hours. Stir after 30 minutes, then again at 1 hour and 90 minutes. The mixture should be steaming, silky, and deeply fragrant by the end.
  5. Stir in vanilla extract just before serving.
  6. Taste and adjust sweetness or spice as desired.
  7. Serve warm, ladled into mugs. Top with whipped cream, marshmallows, or a cinnamon stick. Keep crockpot on ‘warm’ for serving.

Notes

For a dairy-free version, use full-fat oat milk and coconut cream. For a spiked adult version, stir in ¼ cup bourbon or dark rum per serving at the end. The hot chocolate can be stored in the fridge for up to 4 days and reheated on the stovetop or microwave. The cayenne and cinnamon intensify as it sits, so adjust spices accordingly if making ahead.
