Cozy Deli-Style Turkey Club Lunchbox Sandwiches

A cozy, deli-style turkey club sandwich perfect for meal prep that stays fresh and flavorful in a lunchbox. Features crispy bacon, juicy turkey, fresh lettuce and tomato, and toasted bread for a satisfying and comforting lunch.

  • 6 oz thick-cut sliced turkey breast per sandwich
  • 3 thick-cut bacon strips per sandwich, cooked until crispy
  • 23 romaine or iceberg lettuce leaves per sandwich
  • 23 medium thick tomato slices per sandwich
  • 1 tablespoon mayonnaise (regular or light)
  • 1 teaspoon Dijon mustard (optional)
  • 3 slices whole wheat or sourdough sandwich bread, lightly toasted
  • Optional add-ins: avocado slices or spread, crisp cucumber slices, pickles or dill slices

Instructions

  1. Cook 3 thick-cut bacon strips on a cold skillet over medium heat for 6-8 minutes, turning occasionally, until crispy but not burnt. Drain on paper towels.
  2. Lightly toast 3 slices of whole wheat or sourdough bread in a toaster or toaster oven until golden but still soft inside (about 2-3 minutes). Let cool slightly.
  3. Mix 1 tablespoon mayonnaise with 1 teaspoon Dijon mustard in a small bowl.
  4. Lay one slice of toasted bread flat and spread half the mayo-mustard mixture evenly on it.
  5. Layer 3 oz of turkey breast slices, then add 2-3 crisp lettuce leaves and 2-3 tomato slices. Season tomato lightly with salt and pepper.
  6. Place 3 crispy bacon strips over the tomato.
  7. Spread remaining mayo-mustard on the second slice of bread and place it on top, press lightly to hold.
  8. Add the third slice of bread on top, spread side down.
  9. Secure the sandwich with toothpicks or sandwich picks and slice diagonally into halves or quarters.
  10. Wrap each sandwich tightly in parchment paper or reusable sandwich wraps to keep fresh.

Notes

Cook bacon over medium heat flipping often to get crispy but not burnt bacon. Toast bread lightly to add crunch but keep it flexible. Layer lettuce between turkey and tomato to prevent sogginess. Wrap sandwiches tightly in parchment or beeswax wraps to maintain freshness. For meal prep, omit tomato when assembling and add fresh slices before eating to avoid sogginess.
