Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, toss peeled and sliced peaches with 1/2 cup granulated sugar, 1/4 cup brown sugar, 1 teaspoon ground cinnamon, and 1 tablespoon fresh lemon juice. Mix gently and let sit for about 10 minutes.
  3. In a medium mixing bowl, whisk together 2 cups all-purpose flour, 1 tablespoon baking powder, and 1/2 teaspoon salt.
  4. Add cold cubed butter to the flour mixture and cut it in using a pastry cutter or fingers until the mixture resembles coarse crumbs with some pea-sized butter bits.
