These creepy-cute deviled eggs are the perfect Halloween snack, featuring a creamy yolk filling topped with black olive ‘eyeballs’ and red pepper ‘bloodshot’ veins. They’re quick, easy, and guaranteed to be the star of any spooky spread.

  • 3 tablespoons mayonnaise (for 6 eggs)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • Salt and black pepper to taste
  • Paprika for garnish
  • 1 can whole pitted black olives
  • 1 small piece red bell pepper, finely diced
  • Sriracha (optional, a few drops per egg)

Instructions

  1. Boil the eggs: Place eggs in a single layer in a saucepan, cover with cold water by 1 inch. Bring to a rolling boil over high heat. Cover, turn off heat, and let sit for exactly 12 minutes.
  2. Ice bath: While eggs rest, fill a bowl with ice and cold water. Transfer eggs to ice bath using a slotted spoon. Chill for at least 10 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, roll between palms to loosen, then peel starting from the wider end. Rinse off shell bits.
  4. Slice the eggs: Cut each egg in half lengthwise. Pop out yolks into a mixing bowl. Arrange egg white halves on a serving platter, cut side up.
  5. Make the filling: Add mayonnaise, mustard, vinegar, salt, and pepper to the yolks. Mash with a fork until smooth and creamy. Adjust seasoning to taste.
  6. Pipe the filling: Spoon yolk mixture into a piping bag or zip-top bag. Snip off a small corner (about 1/4 inch). Pipe filling into each egg white half, mounding slightly.
  7. Make the eyeballs: Slice black olives into rounds about 1/4 inch thick. Place one round on top of each filling mound, pressing gently.
  8. Add bloodshot details: Arrange tiny pieces of diced red bell pepper around the edge of each olive. For an ‘angry’ look, dab a tiny drop of sriracha on the side of the olive or nearby filling.
  9. Sprinkle with paprika: Lightly dust the entire platter with paprika.
  10. Chill before serving: Refrigerate for at least 15 minutes before serving. Serve cold.
