Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 4 cloves garlic, minced
  • 1 pound ground beef (80/20 blend)
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons tomato paste
  • 1 (28-ounce) can crushed tomatoes
  • 4 cups low-sodium chicken broth
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon sugar
  • 8 ounces dried lasagna noodles, broken into 2-inch pieces
  • 1 cup whole milk ricotta cheese
  • ¼ cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh basil, chopped
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • 1 small clove garlic, minced (optional)

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion and cook for 4-5 minutes until soft and translucent. Add the minced garlic and cook for another 30 seconds.
  2. Add the ground beef to the pot. Break it up and cook until nicely browned, about 6-8 minutes. Spoon out excess fat, leaving about a tablespoon.
  3. Sprinkle in the salt, pepper, oregano, basil, and red pepper flakes (if using). Stir and cook for 1 minute. Add the tomato paste and cook for another 2 minutes.
  4. Pour in the crushed tomatoes, chicken broth, balsamic vinegar, and sugar. Stir, scraping up any browned bits from the bottom. Bring to a boil, then reduce heat to low and simmer uncovered for 15 minutes.
  5. Add the broken lasagna noodles to the pot. Stir gently to submerge. Simmer for 10-12 minutes, stirring occasionally, until noodles are tender but still al dente.
  6. While the noodles cook, prepare the ricotta dollops: In a small bowl, combine the ricotta, Parmesan, parsley, basil, salt, pepper, and minced garlic (if using). Stir until well mixed.
  7. Taste the soup and adjust salt and pepper if needed. Ladle into bowls and top with generous dollops of the ricotta mixture. Sprinkle with extra Parmesan and torn fresh basil. Serve immediately.

Notes

For leftovers, slightly undercook the noodles by 1-2 minutes to prevent mushiness. Store soup and ricotta dollops separately if possible. Reheat on stovetop with a splash of broth or water.
