This creamy, no-cook overnight oats recipe uses mashed banana for natural sweetness and a pudding-like texture. Ready in 5 minutes, it’s a cozy, crowd-pleasing breakfast that tastes like a hug in a jar.

Ingredients

Scale
  • 1 cup (100g) rolled oats
  • 1 large ripe banana
  • 2 tablespoons (32g) creamy peanut butter
  • 3/4 cup (180ml) milk (any kind)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mash the banana in a small bowl or directly in your jar until mostly smooth (about 30 seconds).
  2. Add peanut butter, milk, maple syrup or honey, and vanilla extract to the mashed banana. Stir until fully incorporated.
  3. Add rolled oats, chia seeds (if using), and a pinch of salt. Stir well until evenly combined, ensuring no dry patches remain.
  4. Transfer mixture to a mason jar or airtight container, leaving about an inch of space at the top.
  5. Tightly close the lid and refrigerate for at least 6 hours, preferably overnight.
  6. In the morning, stir the oats. If too thick, add a splash of milk. Serve cold or microwave for 45-60 seconds for warm oats.
  7. Top with sliced banana, extra peanut butter, cinnamon, or chopped nuts if desired.

Notes

For best texture, use rolled oats (not instant or steel-cut). The riper the banana, the sweeter the oats. Stir twice before refrigerating to avoid dry patches. Oats keep in the fridge for up to 5 days, but texture is best within 3 days. Do not freeze.
