  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 2 tablespoons (28g) unsalted butter, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line your muffin tin with paper liners or grease well.
  2. In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  3. In a separate bowl, combine sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract. Whisk until smooth.
  4. Slowly add the dry ingredients to the wet ingredients and stir gently until just combined. Do not overmix.
  5. In a medium bowl, beat cream cheese with sugar, egg, vanilla extract, and flour until smooth and creamy.
  6. Spoon about 2 tablespoons of pumpkin batter into each muffin cup, then add about 1 tablespoon of cream cheese mixture on top.
  7. Use a toothpick or skewer to gently swirl the cream cheese into the pumpkin batter to create a marbled effect.
  8. Mix granulated sugar and cinnamon for the crust. Drizzle melted butter over each muffin, then sprinkle the cinnamon sugar mixture evenly on top.
  9. Bake for 20-25 minutes or until a toothpick inserted near the center comes out clean (avoid the cream cheese swirl area).
  10. Let muffins cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Notes

Do not overmix the batter to keep muffins tender. Use room temperature eggs and cream cheese for smooth swirl. Drizzle melted butter before sprinkling cinnamon sugar to create a crisp crust. Tent with foil if muffins brown too quickly. Let muffins cool before removing from pan to prevent sticking.
