Ingredients

Scale
  • 2 medium apples (Honeycrisp or Granny Smith), peeled, cored, and sliced into ¼-inch thick slices
  • 2 tablespoons granulated sugar
  • 1 tablespoon all-purpose flour
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • Pinch of salt
  • 1 tablespoon unsalted butter, cut into small pieces
  • ¼ cup granulated sugar (for caramel)
  • 2 tablespoons unsalted butter (for caramel), cut into pieces
  • 2 tablespoons heavy cream
  • ¼ teaspoon flaky sea salt (plus more for finishing)
  • ½ teaspoon vanilla extract
  • ⅓ cup old-fashioned rolled oats
  • ⅓ cup all-purpose flour
  • ¼ cup packed light brown sugar
  • ¼ teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Make the salted caramel sauce: In a small saucepan over medium heat, cook ¼ cup granulated sugar, stirring occasionally, until it melts and turns a deep amber color (5-7 minutes). Add 2 tablespoons butter and whisk until melted and combined.
  3. Slowly pour in 2 tablespoons heavy cream while whisking constantly until smooth. Remove from heat and stir in ¼ teaspoon flaky sea salt and ½ teaspoon vanilla extract. Set aside to cool slightly.
  4. Prepare the apples: Peel, core, and slice apples into ¼-inch thick slices. In a medium bowl, toss with 2 tablespoons granulated sugar, 1 tablespoon flour, ½ teaspoon cinnamon, ⅛ teaspoon nutmeg, and a pinch of salt.
  5. Make the crisp topping: In a small bowl, combine rolled oats, ⅓ cup flour, brown sugar, ¼ teaspoon cinnamon, and a pinch of salt. Add cold cubed butter and cut in with a pastry cutter or fork until mixture resembles coarse crumbs with some pea-sized butter pieces.
  6. Assemble the crisp: Transfer apple mixture to a greased small baking dish or 6-inch skillet. Drizzle about half of the caramel sauce over the apples. Dot with 1 tablespoon butter pieces. Sprinkle oat topping evenly over apples.
  7. Bake for 30-35 minutes, until topping is golden brown and filling is bubbly around the edges. Tent with foil if topping browns too quickly.
  8. Let cool for 5-10 minutes. Drizzle with remaining caramel sauce and a final pinch of flaky sea salt. Serve warm.

Notes

Don’t rush the caramel; use medium heat. Use cold butter for the topping. Slice apples evenly (¼-inch thick). Let the crisp rest for 5-10 minutes after baking to allow juices to thicken. For extra flavor, toast oats in a dry skillet for 2-3 minutes before mixing into topping. If topping browns too quickly, cover loosely with foil.
