Instructions

  1. Prepare the slow cooker. Plug in your slow cooker and set it to low. If your slow cooker has a ceramic insert, give it a quick rinse and dry it.
  2. Pour in the apple cider. Measure out 8 cups (64 ounces) of apple cider and pour it into the slow cooker.
  3. Add the caramel sauce. Spoon in 1/2 cup of caramel sauce.
  4. Toss in the spices. Add 2 cinnamon sticks, 1 teaspoon whole cloves, 1 star anise (if using), and 1/4 teaspoon ground nutmeg.
  5. Add the apple slices. Thinly slice 1 large apple and add the slices to the slow cooker.
  6. Stir gently. Use a wooden spoon or spatula to stir everything together.
  7. Cover and cook. Put the lid on the slow cooker and set it to low. Let it cook for 2 to 3 hours.
  8. Taste and adjust. After 2 hours, give it a taste. If you want it sweeter, add another tablespoon of caramel sauce. If you want more spice, let it cook longer or add another cinnamon stick.
  9. Strain (optional). If you used whole spices and want a perfectly clear cider, strain it through a fine-mesh strainer into a large pitcher or directly into mugs.
  10. Serve warm. Ladle the cider into mugs. Top with a generous dollop of whipped cream and a drizzle of extra caramel sauce if desired. Garnish with a cinnamon stick or an apple slice. Serve immediately.
