Cozy Smoky Sausage and Potato Soup: Easy One-Pot Recipe

A hearty, one-pot soup with smoky sausage and tender potatoes in a rich, creamy broth. Perfect for busy weeknights, this comforting meal comes together in about 40 minutes and is sure to become a family favorite.

  • 450g (1 lb) smoked sausage, sliced into rounds
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • 1 teaspoon dried thyme
  • 680g (about 45 medium) Yukon Gold potatoes, peeled and diced into 1-inch cubes
  • 1 liter (4 cups) low-sodium chicken broth
  • 2 bay leaves
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • 120 ml (1/2 cup) heavy cream (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sliced sausage in a single layer (work in batches if needed) and cook for 4-5 minutes, stirring occasionally, until deeply browned and crispy. Transfer sausage to a plate with a slotted spoon, leaving the rendered fat in the pot.
  2. Reduce heat to medium. Add diced onion to the pot and cook for 4-5 minutes, scraping up browned bits from the bottom, until translucent and softened. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in smoked paprika and dried thyme. Cook for 1 minute, stirring constantly, until fragrant.
  4. Add diced potatoes, chicken broth, bay leaves, 1 teaspoon salt, and black pepper. Stir to combine, scraping the bottom of the pot.
  5. Bring to a boil, then reduce heat to low. Cover and simmer for 15-20 minutes, until potatoes are fork-tender.
  6. Stir in heavy cream (if using) and return browned sausage to the pot. Simmer uncovered for 5 minutes to meld flavors. Taste and adjust seasoning with more salt, pepper, or smoked paprika if desired.
  7. Remove bay leaves. Ladle soup into bowls, garnish with fresh parsley, and serve hot.

Notes

For best flavor, don’t rush browning the sausage. Scrape the pot when adding onions to deglaze. Cut potatoes evenly for uniform cooking. Season as you go. The soup tastes even better the next day. If using cream, add at the end and keep heat low to prevent curdling.
