Ingredients

Scale
  • 1 stick (113g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1 1/4 cups (156g) all-purpose flour
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup (175g) semi-sweet chocolate chips
  • 1 teaspoon coconut oil (optional)
  • About 48 candy eyes (or 24 pairs)

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, melt butter in the microwave in 20-second bursts. Let cool for 2 minutes. Add brown sugar and granulated sugar; whisk vigorously for about 1 minute until mixture looks like wet sand.
  3. Add egg and vanilla extract; whisk until smooth and glossy, about 30 seconds.
  4. In a small bowl, whisk together flour, cocoa powder, baking soda, salt, and cinnamon.
  5. Fold dry ingredients into wet ingredients with a spatula until just combined. Do not overmix.
  6. Scoop dough into 1.5-tablespoon balls (about 25g each) and place 2 inches apart on prepared baking sheets. Do not flatten.
  7. Bake one sheet at a time for 8-10 minutes, until edges are set and centers are still soft. For fudgier cookies, bake 8 minutes; for firmer, 10 minutes.
  8. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  9. While cookies cool, melt chocolate chips and coconut oil (if using) in a small microwave-safe bowl in 20-second intervals, stirring between each, until smooth.
  10. Transfer melted chocolate to a piping bag or zip-top bag. Snip a very small hole in the corner.
  11. Working one cookie at a time, pipe four curved lines on each side of the cookie to create spider legs. Start from the center and curve outward.
  12. While chocolate is still wet, press two candy eyes onto the top of each cookie near the front.
  13. Let chocolate set completely, about 15-20 minutes at room temperature or 5-7 minutes in the refrigerator.

Notes

For best texture, use natural cocoa powder (not Dutch-processed). Melted butter gives a fudgy texture. Don’t overmix the dough. Let cookies cool completely before piping legs. Cookies taste even better on day two. Store in an airtight container at room temperature for up to 5 days. Freeze baked cookies (without legs) for up to 3 months.
