Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean recommended)
  • 1/2 cup (40g) plain breadcrumbs (panko works great)
  • 1 large egg, lightly beaten
  • 1/4 cup (60ml) milk (any kind, even dairy-free)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried sage
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 cup (120g) whole berry cranberry sauce
  • 1/4 cup (60g) mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon fresh lemon juice
  • A pinch of salt
  • 12 slider buns or Hawaiian rolls
  • 6 slices provolone or Swiss cheese, cut in half (or 1 1/2 cups shredded mozzarella)
  • 2 tablespoons melted butter
  • 1 tablespoon everything bagel seasoning or sesame seeds (optional)

Instructions

  1. Make the Cranberry Aioli: In a small bowl, combine the cranberry sauce, mayonnaise, Dijon mustard, lemon juice, and a pinch of salt. Stir until well combined. Set aside.
  2. Prepare the Turkey Patties: In a medium bowl, combine the ground turkey, breadcrumbs, beaten egg, milk, garlic powder, onion powder, dried sage, salt, and pepper. Gently mix with your hands until just combined. Do not overmix.
  3. Form the Patties: Divide the turkey mixture into 12 equal portions (about 1/4 cup each). Roll each into a ball, then flatten into a small patty, about 2 inches wide.
  4. Cook the Patties: Heat olive oil in a large skillet over medium-high heat. Cook patties in batches for 3-4 minutes per side, until golden brown and cooked through (internal temperature of 165°F/74°C). Transfer to a plate.
  5. Preheat the Oven: Preheat oven to 350°F (175°C).
  6. Assemble the Sliders: Without separating, slice the entire package of slider rolls in half horizontally. Place the bottom half in a baking dish. Spread a generous layer of cranberry aioli on the bottom buns. Place a cooked turkey patty on each roll bottom, then top with a piece of cheese. Place the top half of the rolls over the cheese.
  7. Finish the Tops: Brush the melted butter generously over the tops of the rolls. Sprinkle with everything bagel seasoning or sesame seeds if using.
  8. Bake: Bake for 10-12 minutes, until the cheese is melted and the tops are golden brown.
  9. Rest and Serve: Let the sliders rest in the pan for 5 minutes before serving. Cut between the rolls to separate. Serve warm with extra cranberry aioli for dipping.

Notes

Don’t overmix the turkey mixture to keep patties tender. Use a meat thermometer to ensure patties reach 165°F without overcooking. For extra-crispy tops, broil for the last 1-2 minutes. The cranberry aioli can be made up to 3 days in advance.
