  • 1.5 lbs boneless, skinless chicken breasts (about 23 large)
  • 8 oz block cream cheese, softened and cubed
  • 4 cups low-sodium chicken broth
  • 2 cans (15 oz each) Great Northern beans, drained and rinsed
  • 2 cans (4 oz each) diced green chiles
  • 1 cup frozen corn
  • 1 medium yellow onion, diced
  • 34 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper (or to taste)
  • Optional toppings: shredded Monterey Jack cheese, fresh cilantro, diced avocado, sour cream, tortilla strips, lime wedges, sliced jalapeños

Instructions

  1. Pat the chicken breasts dry with paper towels and season lightly with salt and pepper. Place in the bottom of a 6-quart slow cooker in a single layer.
  2. Scatter the diced onion and minced garlic over the chicken.
  3. Drain and rinse the Great Northern beans, then add them to the slow cooker. Add the frozen corn on top.
  4. Open the cans of diced green chiles and add them, juice and all.
  5. Sprinkle the ground cumin, dried oregano, chili powder, and remaining salt and pepper evenly over everything.
  6. Slowly pour the chicken broth over the ingredients, dispersing it evenly.
  7. Cut the softened cream cheese into about 8 cubes and place them on top of the liquid. Do not stir.
  8. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the chicken is fork-tender.
  9. About 30 minutes before serving, remove the chicken breasts to a cutting board and shred with two forks. Return the shredded chicken to the slow cooker.
  10. Stir everything well to incorporate the melted cream cheese. Taste and adjust seasoning if needed (add more salt, lime juice, or cayenne).
  11. Ladle into bowls and serve with desired toppings.

Notes

For best results, let cream cheese come to room temperature before cubing. Cook on low for optimal texture and flavor. Shred chicken separately to avoid mashing beans. Taste and adjust seasoning at the end. To thicken, mash some beans against the pot and stir back in.
