  • 2 tablespoons fresh dill, finely chopped
  • 1/2 cup (120 ml) plain Greek yogurt, full-fat or low-fat
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 small garlic clove, minced
  • 1 tablespoon extra virgin olive oil
  • Salt and pepper to taste
  • Optional: pinch of crushed red pepper flakes
  • Optional: 1 teaspoon honey

Instructions

  1. Wash and thinly slice 2 medium cucumbers (about 500 grams). Place slices in a colander and sprinkle lightly with salt. Let sit for 10 minutes to draw out excess moisture, then gently pat dry with a paper towel.
  2. In a medium bowl, whisk together 1/2 cup plain Greek yogurt, 2 tablespoons mayonnaise, 1 tablespoon fresh lemon juice, 1 tablespoon extra virgin olive oil, and 1 small minced garlic clove. Add salt and freshly ground black pepper to taste. Whisk until smooth and creamy. Stir in honey or crushed red pepper flakes if using.
  3. Transfer dried cucumber slices to a large mixing bowl. Add 4 ounces crumbled feta cheese and 2 tablespoons finely chopped fresh dill. Pour the dressing over the salad.
  4. Toss gently with salad tongs or two large spoons to coat cucumbers and feta evenly without mashing.
  5. Cover and refrigerate for at least 20 minutes before serving to let flavors meld.
  6. Before serving, give the salad a quick stir and adjust seasoning if needed.
