  • 1 tablespoon chia seeds
  • Pinch of salt
  • 1/2 cup milk (any kind, such as unsweetened almond milk, whole milk, or oat milk)
  • 1 to 2 tablespoons pure maple syrup
  • 1/4 teaspoon vanilla extract
  • Optional toppings: fresh berries, sliced banana, extra maple syrup, cinnamon, chopped nuts, toasted coconut flakes

Instructions

  1. In a jar or small bowl, combine the rolled oats, chia seeds, and a pinch of salt. Stir to distribute evenly.
  2. Add the milk, maple syrup, and vanilla extract. Stir thoroughly to break up any clumps of chia seeds.
  3. Cover with a lid and refrigerate for at least 6 hours, preferably overnight.
  4. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  5. Add desired toppings and enjoy cold or at room temperature.

Notes

For best texture, use rolled oats (not instant or steel-cut). Stir chia seeds thoroughly to avoid clumps. Oats keep in the fridge for up to 5 days; best within 3 days. Toasting the oats in a dry skillet before mixing adds a nutty flavor. For a thicker consistency, use a 1:1 ratio of oats to milk; for creamier, use 1/2 cup oats to 3/4 cup milk.
