Instructions

  1. Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
  2. Heat olive oil over medium heat in a large deep skillet. Add chicken breasts and brown on both sides, about 4-5 minutes per side. Remove chicken and set aside.
  3. In the same skillet, sauté minced garlic and chopped sun-dried tomatoes for about 1 minute until fragrant.
  4. Pour in chicken broth and heavy cream, stir to combine. Add uncooked pasta in an even layer and press chicken breasts back into the liquid, partially submerged.
  5. Cover skillet and simmer over medium-low heat until pasta is tender and chicken is cooked through, about 15-20 minutes. Stir gently once or twice to prevent sticking.
  6. Remove lid, shred chicken into bite-sized pieces and stir back into the sauce. Add grated Parmesan cheese and stir until melted and sauce thickens. Adjust salt and pepper to taste.
