  • 4 boneless, skinless chicken breasts (about 6 ounces or 170 grams each)
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes (oil-packed, drained, reserve some oil)
  • 1 cup (240 ml) heavy cream
  • ½ cup (120 ml) low sodium chicken broth
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, thyme)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Handful fresh basil or parsley, chopped for garnish

Instructions

  1. Pat dry chicken breasts and season both sides with salt, pepper, and Italian seasoning. Let rest at room temperature for 10 minutes.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook 5-6 minutes per side until golden and cooked through (internal temperature 165°F / 74°C). Remove and keep warm tented with foil.
  3. Lower heat to medium and add butter. When melted, stir in minced garlic and chopped sun-dried tomatoes. Sauté 1-2 minutes until fragrant and tomatoes soften.
  4. Pour in chicken broth, scraping up browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  5. Stir in heavy cream and Parmesan cheese. Cook 3-4 minutes until cheese melts and sauce thickens. Add red pepper flakes if using. Adjust seasoning with salt and pepper.
  6. Return chicken breasts to the pan, nestle into sauce, cover, and simmer on low heat for 5 minutes to meld flavors and heat through.
  7. Sprinkle chopped fresh basil or parsley on top before serving.

Notes

Do not rush searing the chicken to lock in juices and create a golden crust. If sauce is too thick, add more broth or cream to loosen. Use fresh garlic for best flavor. Simmer sauce gently to avoid separation. Leftovers keep well refrigerated for up to 3 days; reheat gently with a splash of broth or cream.
