A simple and delicious no-churn ice cream featuring honey-roasted peaches that create a creamy, fruity summer dessert without the need for an ice cream maker.

Ingredients

Scale
  • 3 large ripe peaches, peeled and halved
  • 1/4 cup (85g) raw honey
  • 2 cups (480ml) cold heavy whipping cream
  • 1 (14 oz/396g) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • Pinch of sea salt (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Peel and halve the peaches, removing the pits. Place them cut side up on the baking sheet.
  3. Drizzle 2 tablespoons of honey evenly over the peaches.
  4. Roast for 20-25 minutes until the peaches are soft, caramelized, and fragrant.
  5. Remove from the oven and let the peaches cool completely at room temperature.
  6. Pour the cold heavy cream into a large bowl and whip on medium-high speed until soft peaks form, about 3-4 minutes.
  7. In a separate bowl, mix the sweetened condensed milk with vanilla extract and a pinch of sea salt if using.
  8. Gently fold the whipped cream into the sweetened condensed milk mixture, keeping as much air as possible.
  9. Chop the cooled roasted peaches roughly and fold them gently into the cream mixture.
  10. Transfer the mixture to a freezer-safe container, smooth the top, cover, and freeze for at least 6 hours or overnight.
  11. Before serving, let the ice cream sit at room temperature for 5 minutes to soften slightly. Drizzle with extra honey if desired.

Notes

Keep heavy cream cold before whipping for best results. Watch peaches closely during roasting to avoid burnt edges. Fold whipped cream gently to maintain airy texture. Let ice cream freeze overnight for best scoopability. Optional: chill roasted peaches in fridge to speed folding step.
